Helicopter blades have pitch/yaw/roll response on by default.The pitch and yaw responses are the same as those of control surfaces from the main game. The roll response, however, is reversed in helicopter and prop blades. The attached craft has both types of control surfaces placed near each other.

The pitch/yaw/roll response is useful on propeller blades in limited cases.
For example, these responses can act as cyclic control, in a centered-axis helicopter so that the responses change properly as the blade rotates (https://kerbalx.com/OHara/Helicopter-Controlled-by-Aero-Surfaces-Only) but the roll control gives reversed control in this case so SAS must be turned off.
